Happy Weekend!

Clayton's license finally came in!
 First patient!!
Our sunflower finally bloomed!
Dot found a cool spot on our walk.  She just plopped down out of nowhere.
Biggest Loser Pancakes

Brett wanted pancakes this morning so I tried out a new recipe- Pinterest of course!  
We were surprised that they were so good!  Once you see the ingredients you will understand why we were surprised!   It calls for cottage cheese which I randomly had because I thought I was buying ricotta cheese a few weeks ago.
It is a special treat for us to get to wake up, drink coffee and have breakfast together.  Brett gets up so early during the week and works most weekends so this morning was so nice!  I can't wait for the day when we get to do this every day.

Here is the recipe:


Ingredients:

6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla



Instructions:

In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed. Makes about 10 pancakes.

Can't believe how fast the time has gone by! That sunflower scared me, hope it's gone by the time I come back to visit. I had just pinned those pancakes and I saw you made them, they look delicious. I want them now but I don't have the cottage cheese, boo
